29 - BOTTARGA
Oristano and a good part of its province, especially the one facing the sea, owes much of its economy to fishing, as well as to a deep-rooted agricultural tradition and a growing tourism due to the riches and the numerous archaeological and architectural attractions offered by the territory.
Compared to the more diffused deep-sea fishing that distinguishes the island's sector, the Oristano one, and in particular the Sinis one, concentrates more on the lagoon landscape, characterized by the pond of Cabras. It is one of the most important and peculiar humid area of the island, constituted by many biodiversity.
It is thanks to the presence of the pond that the production of botargo has exploded in the area. It is a particularly delicious food specialty and consists of the veal sack containing mullet eggs. Its processing involves salting, pressing and drying the eggs using traditional methods. The power, flavour and great taste of the roe are concentrated in apparently small portions behind which are hidden long and delicate processing.
Mullet botargo, compared to, for example, that of tuna, which is produced for the most part in the Carloforte area, has a less incisive flavour but probably has a greater culinary versatility.
It was probably the Egyptians who imported the processing techniques and recipes for botargo into Sardinia and throughout the Western Mediterranean.
In today's cuisine, botargo is part of the class to which few elite delicacies such as caviar or truffles belong.
